Description

A highly regarded edible mushroom known for its abundance of white, sticky latex and a distinct, fishy odor when aging or drying.

Cap: Convex becoming depressed or funnel-shaped, 5-12 cm wide, orange-brown or reddish-brown.
Gills: Adnate to decurrent, crowded, cream to pale yellow, staining brown when bruised.
Stem: Stout, 4-10 cm tall, solid, colored like the cap or slightly paler.
Flesh: White, dense, and firm, exuding abundant white latex when damaged.
Fruiting body: Sturdy, firm, and medium-sized with a dry to slightly velvety cap.
Habitat: Ectomycorrhizal with hardwoods (especially oak) and occasionally conifers, found on the ground in summer and fall.

This is a choice edible mushroom. However, ensure positive identification to avoid confusion with non-edible or less desirable species.

Common in mixed hardwood forests, particularly associated with Fagus and Quercus species.

The hallmark of this species is the copious amount of white, sticky latex that does not change color immediately upon exposure.

Fresh specimens have a mild odor, but as they age or are handled, they develop a distinct, strong fishy or seafood-like smell.
